Charleston Hospitality Group (CHG), a restaurant and entertainment group of local restaurants and entertainment venues, recently unveiled its newest concept, Republic of Pizza, at 451 King Street, adjacent to Toast! On King. This new eatery, which opened its doors on May 31st, is CHG's 11th property in South Carolina, joining sister brands Toast! All Day, Queology, Eli's Table, John King Grill & Bar, and Honkytonk.
“With more than 18 years serving the local community with our restaurant brands, we're thrilled to offer a new concept to the Charleston community,” said Eric Parker, Chief Operating Officer, Charleston Hospitality Group. “We hope Republic of Pizza will become downtown's favorite spot for authentic Italian pizza, and we look forward to unveiling our second location in 2023 in Savannah, Georgia.”
Opening in the former Monza Pizza Bar space, Republic of Pizza is open daily from 3 pm to midnight. The menu offers an array of starters, small plates and salads, and Neapolitan-style wood-fired pizzas.
Guests can also enjoy a variety of antipasti including Wood-fired Wings with caramelized onions and focaccia; Chopped Salad with mixed greens, cucumbers, olives, cherry peppers, pancetta, and Auricchio provolone; a Meatball served with San Marzano tomato and whipped ricotta; Truffle Burrata with prosciutto, heirloom tomatoes and herbed vinaigrette; and Broccoli Rabe with sausage, chili flakes, EVOO, and confit garlic.
Republic of Pizza's Neapolitan-style pizzas include Margherita with fresh mozzarella, basil, Parmigiano-Reggiano; Sicilian Pesto featuring fromage blanc, ground pistachio, crème fraiche mozzarella, and Parmigiano-Reggiano; Shroom with roasted seasonal mushrooms, chives, black garlic aioli, and Cippolini onions; White Clam featuring Pecorino Romano, mozzarella, Italian parsley, garlic, and EVOO; Fennel Sausage with roasted fennel, mozzarella and San Marzano tomatoes; Pepperoni with San Marzano tomatoes and mozzarella; Prosciutto & Rocket with San Marzano tomatoes, chili flakes, mozzarella, and EVOO; and Meatball with whipped ricotta, fresh basil, San Marzano tomatoes, and mozzarella.
Republic of Pizza offers a full wine, beer, and specialty cocktail list as well as freshly-brewed cappuccino and espresso drinks. Wine selections include Chateau Sauverian Pinot Noir; Proverb Merlot, Chardonnay and Pinot Grigio; and Rosehaven Rosé. Specialty drinks include Frosé, Basil Martini, Spiced White Wine Sangria, Cucumber Mule and Seasonal Punch. A wide selection of domestic and imported beers feature local favorites Palmetto Brewing Company Amber, Holy City Brewing Pluff Mud Porter, and Palmetto Brewing Company Huger Street IPA.
