Chef Abarca (Credit Andrew Cebulka) King Street Mexican eatery Maya today shared that a new chef is taking over the reins in the kitchen and they will debut a refreshed menu.
Jullian Abarca will now serve as Maya’s executive chef. Before joining the team at Maya, Abarca ran Charleston-based pop-up restaurant Matzo Y Masa, which specialized in Jewish-Mexican food. Chef Abarca also owns local hot sauce company, Chile Dulce, which produces a line of small batch, preservative-free sauces from a variety of peppers, including flavors like Guajillo Agave, Haberno Pear, and Funky Fresno.

- Watermelon Salad with Chamoy, Goat Cheese, Fresh Mint, Tajin, and Pepitas
- Rotating Ceviche with Lime juice, Pickled Sweet Peppers, Fresh Herbs, Escabeche, and Chips
- Local Catch with Plancha Grilled Whole Filets, Roasted Poblano Chili Rajas, and Creamed Corn
