The Establishment, a seafood-focused restaurant from the Concentrics Restaurants Group, is scheduled to open at 28 Broad Street on May 17th . Executive Chef Matt Canter will lead the kitchen with a focus on fresh and sustainable ingredients from local and regional farms, purveyors, and fishermen.
Chef Canter's menu will include small and large plates including triggerfish crudo with Calabrian chile; Nantucket bay scallop with Meyer lemon; olive oil baked wreckfish with Carolina Gold rice; sautéed black bass with truffled corn vinaigrette; and roasted ribeye with confit young potatoes.
The restaurant also includes:
- Brad Mogan, formerly of Rappahannock Oyster Bar, as general manager
- Sommelier Andres Contreras, formerly of 39 Rue de Jean
- Sommelier Josh Wheat, formerly of Oak Steakhouse
The Establisment will feature an 18-seat bar, 140-seat dining room with open kitchen, a 10-seat chef's communal table, and a private dining room. Itvwill initially open Tuesday through Saturday beginning at 5 pm.
The restaurant is located in the James Gregorie House, which was constructed in 1791. The restaurant's renovations from Atlanta-based Johnson Studios include an original brick-lined entryway and a 20-foot-tall glass wine case filled with more than 3,000 bottles from around the world.
