The Select is now serving refreshed menus for Spring 2025. The new offerings highlight the best of New American cuisine with an emphasis on locally-sourced ingredients, innovative cooking techniques, and a celebration of the season.
"We're thrilled to bring these fresh, seasonal dishes to our guests," said Culinary Director Julian Parker. "Spring in Charleston brings an abundance of local produce and seafood, and we've woven those ingredients into both the brunch and dinner menus in a way that is sure to excite the palate."
For dinner, The Select’s Spring menu features:
- Caribbean Ceviche - This preparation is a tradition in the Caribbean and is made with Fresh Fish marinated in lime juice, a house Coconut Leche de Tigre, Fresno Chili Peppers, Red Onion, Sweet Local Corn and Cilantro served with Taro Chips.
- Berry and Bleu Salad - This bright spring salad is made with Vertical Roots Artisan Lettuce, Bleu Cheese Crumble, Blackberry, Orange Segments, Red Onion, Cucumber, Mint, Pecan and Strawberry Crumble and tossed in a Blackberry Balsamic Vinaigrette.
- Risotto al Verde - This bright vegetarian pasta dish is made with risotto cooked in a Grilled Vegetable Broth, Shaved Pecorino Cheese, Preserved Lemon and Aleppo Butter, Green Asparagus, Haricot Verts and finished with Confit Tomatoes and a light Basil Oil.
- Burrata du Jardin - Housemade Burrata served with local strawberries prepared 4 ways and an Arugula Sponge Cake, and finished with Marcona Almonds, Balsamic Reduction and Edible Viola Flowers.
The Select also introduces a selection of new craft cocktails:
- Bird of Paradise, a refreshing mix of chamomile-infused vodka, strawberry reduction, lemon and Amaro served in The Select’s signature bird glass.
- Edens Envy features cucumber gin, melon liqueur, elderflower, lime and soda.
- Amber & Oak is crafted with butter-washed Old Forester, walnut bitters, apricot liqueur and maple syrup.
- San Juan Sour made with Havana Club Anejo Rum, Angostura bitters, Orgeat, lemon and egg white for a fun twist on a classic sour cocktail.
