Restauranteurs have always had to be innovative when it came to off-peak hour programming, but Grimaldi’s Pizzeria had a unique problem – stoking their iconic coal-fired brick ovens. In order to maintain the high temperatures needed to create Grimaldi’s signature and award-winning crispy pizza, the fire must be stoked twice a day. Every morning and afternoon expert pizza makers clean the old coal out of the ovens and rebuild the fire. The process can take up to two hours, which could lead to an empty restaurant while the team is still hard at work.
Rather than ceasing operations every afternoon, Grimaldi’s will offer their Stoking Social Hour promotion. Seven days a week guests can enjoy $10 cocktails, $3 off starters and salads and $2 off beer wine and mocktails between 3 p.m. and 5 p.m. This promotion is available for dine-in only, with pricing and selections varying by location.
