Ma’am Saab, the popular Pakistani restaurant in downtown Charleston, has taken on a new and deeply personal focus — a menu that Raheel Gauba, the restaurant’s owner and new executive chef, has spent a lifetime collecting. Now leading the kitchen, he introduces several new dishes alongside five nightly specials — each a different reason to celebrate friends, family and loved ones.
“For years I led everything at Ma’am Saab but the kitchen — the vision, the hospitality, the room. Now the kitchen is mine too, and I’m loving every second of it,” Gauba said. “This menu is my life on a plate: the places I’ve been, the people I’ve missed, the flavors I could never let go of. It’s also a thank-you to the chefs who carried the torch before me and helped us get here. I never imagined I’d end up in this seat — and now I can’t imagine being anywhere else.”
The new menu centers on the Lucknow Nihari, a 16-hour slow-cooked lamb shank made in limited numbers each night. There is a Super Highway Karahi, drawn from the dhabas off Karachi’s Super Highway that Gauba visited with his late uncle, and the Karachi Style Biryani he grew up eating.
At the chaat counter, a Fritos Chaat riffs on the walking taco, and a reinvented Sweet Potato Chaat is built on local Lowcountry sweet potatoes. For dessert, the Ras Malai Tres Leches fuses two classics.
The guided, three-course Ma’am Saab Tasting Experience ($69 per person) is its own journey — a separate progression with dining surprises found nowhere else on the menu, including a new Watermelon Masala Chaat, Raj Kachori and Gunpowder Okra Fries.
There is now something to look forward to five nights a week:
- Sunday, Local Love Night: Bring a local first-timer and enjoy a complimentary off-menu Pakistani street snack.
- Monday, Industry Night: $10 cocktails and appetizers for local hospitality professionals.
- Tuesday, Service Appreciation: 10% off for active-duty military members, first responders, law enforcement officers, teachers and mental health therapists.
- Wednesday, Date Night: A multicourse tasting with welcome bubbly and dessert, designed for single, double or triple dates.
- Thursday, Polaroid Night: One moment captured at the table to take home.
“Hospitality isn’t just what’s on the plate — it’s who you get to share the table with,” Gauba said. “The best tables are loud, a little messy, and full of people who like each other, and we built these nights around that. For example, Date Night is our love letter to a proper night out: bubbly in hand, a table full of spice, dessert to finish. And Local Love Night is dedicated to the locals who’ve shown up for us time and again — we’re here because of them. This city has given me so much over the years, and these nights are my way of giving some of it back.”
