The hospitality team behind several Charleston restaurant concepts will open its newest project, Jimmy Rosso, in summer 2026 at the entrance of Brickyard Plantation in North Mount Pleasant.
Millers All Day Hospitality says the restaurant aims to bring a "fresh, intentional perspective to pizza by blending Brooklyn-inspired craft and technique with the ingredient-driven approach that has long defined the group’s work."
In 2025, the leadership team traveled to Brooklyn for a multi-day deep dive into the borough’s renowned pizza scene.
“We wanted to understand what makes great pizza great — not to mimic a specific style, but to learn from the best and bring those principles home,” said founder Nathan Thurston.
The team says that research shaped the foundation of Jimmy Rosso’s approach, which will focus on thin, lighter-crust, large-format pies.
The name Jimmy Rosso translates to “Jimmy Red,” a reference to Jimmy Red corn grown and milled by Marsh Hen Mill, the Edisto Island mill led by Greg Johnsman, who is also a co-owner of Millers All Day and Jimmy Rosso. The owners say the new restaurant will incorporate Southern grain and milling traditions into its core philosophy and is exploring ways to integrate Jimmy Red corn into the menu.
Jimmy Rosso will also be the first restaurant in Charleston to install the New York WaterMaker system, which engineers water to replicate New York City’s mineral profile and pH for dough production.
The restaurant’s design and visual identity are being developed with longtime collaborators, including architect Dan Sweeney of Stumphouse, Whitney Reitz Designs for interiors, and Outline for branding.
“We’ve been thoughtful about every step of this concept — from the research to the name to the creative partnerships,” Thurston said. “Mount Pleasant has a strong appetite for high-quality, approachable dining, and we feel Jimmy Rosso will bring something genuinely new to that landscape.”
Jimmy Rosso will offer lunch and dinner service. With engineering approvals underway and permitting in progress, renovations are expected to begin soon, with construction focused primarily on cosmetic upgrades.
