Hall Management Group has added one of the world's most coveted culinary collections to its portfolio: authentic Japanese Wagyu sourced directly from Japan's prestigious annual auction in Kyoto. Owner Tommy Hall and Executive Chef Matthew Niessner were among just 16 Americans invited to attend the exclusive event. There, the duo personally selected Hall Management Group's exclusive reserve of premium A5 Japanese Wagyu, sourcing exceptional cattle from three distinct prefectures: Yamaguchi, Hokkaido and Kagoshima. The exclusive collection will be showcased through a series of upcoming dining experiences across the group's restaurants.
"At Halls, we've always been committed to serving exceptional USDA Prime beef, but what we secured in Japan is unlike anything we've ever offered. The quality and richness of this A5 Wagyu will truly blow our guests away, and we're thrilled to share it with them," Hall said.
The Halls Chophouse Wagyu Experience dinner series will make its debut Saturday, Aug. 8, 2026, at Halls Signature Events with an exclusive ticketed dinner featuring cocktail pairings and showcasing the rare Japanese A5 Wagyu. The evening will feature a multi-course menu highlighting the exceptional beef alongside interactive chef stations where guests can watch the craftsmanship and preparation unfold in real time. In a nod to the Kyoto auction where the collection was secured, the evening will culminate with a live auction of a premium Wagyu cut, offering one guest the rare opportunity to take home a piece of this extraordinary collection.
Tickets are $400 per person, including pairings. Tables for six guests are also available for $2,200. With limited seating available, the one-night-only experience is expected to be a highly sought-after culinary event.
"As a chef, opportunities like this come once in a career. Seeing these cattle and tasting the Wagyu in Japan gave me a new appreciation for the level of care behind every cut. I'm excited to showcase this incredible product in a way that lets its quality speak for itself," Niessner said.
Following the series launch, the Wagyu Dinner Series will continue with a curated lineup of one-night-only experiences hosted across Hall Management Group's acclaimed concepts. Each event will offer a unique interpretation of the rare Japanese A5 Wagyu, showcasing the creativity and culinary perspective of each chef while celebrating one of the world's most prized ingredients.
From Kyoto to the Carolinas, this exclusive dinner series invites guests to experience one of the world's most celebrated ingredients through a collection of unforgettable evenings.
